Why? Because this weekend was completely indulgent. Trevor and I had the b.e.s.t. time in Chicago this weekend. Friday, two of our very good friends (Hi Jackson & Anne👋) got married and on Saturday celebrated their “Cubby-Moon” at a Cubs game.

The wedding was a blast, and naturally, I was super excited about the food. Letmetellyou I was not disappointed. I stuffed my face with great appetizers, amazing tacos (the vegetarian potato tacos were freaking delicious – must re-create soon), and of course, CUPCAKES (also, mustre-create the banana ones – OMG). Then on Saturday Trevor and I ate classic ball park food – ahem,really crappy burgers that taste oh-so-good – and watched the game before heading home that evening.

Because we were so exhausted from all the fun, Trevor and I had the laziest Sunday I think we’ve ever had and ate. . . FROZEN. PIZZA.🙈

So. Again. I tell you. Word of the week: DETOX.

As you can see in the video above👆, not only are these Healthy Asian Lettuce Wraps full of super healthy and delicious ingredients, they’re also suuuuuper easy to make.

Eating healthy can be SO fun and easy if you follow two rules: It’s gotta be full of flavor and texture and it’s gotta be quick and easy to make. Luckily, these lettuce wraps totally fit the bill.

Rule #1: Massive amounts of flavor and texture come from hoisin sauce, lime juice, a touch of peanut butter, sriracha, carrots, and crunchy peanuts. So. Darn. Good.

Here’s what you’re gonna do:

Start by whisking together a little sauce: soy sauce, hoisin sauce, lime juice, peanut butter, ground ginger, and sriracha.

Then, in a large skillet, you’re going to cook some onion in a teeny tiny touch of sesame oil. Once the onion is nice and tender, you’ll add in some cubedchicken, shredded carrots, and garlic.

I mean. That was ridiculously easy, yes? Yes!

I served the chicken mixture in some Bostonlettuce <– my FAVE, with a scoop of cauliflower “fried” rice, and topped them off with some peanuts for crunch and a sprinkle of green onions and cilantro to keep these nice and fresh.

I feel like lettuce wraps can be SO boring, wimpy, and won’t keep you full for more than 30 minutes, but these Asian Lettuce Wraps are just the opposite.

Ingredients

US Customary - Metric

Sauce

  • 2 tablespoons soy sauce use tamari if gluten free
  • 2 tablespoons hoisin sauce
  • 2 tablespoons lime juice
  • 1 tablespoon peanut butter
  • 1/4 teaspoon ground ginger
  • 1/2 tablespoon Sriracha less if you don't like spice

Filling

  • 1 teaspoon sesame oil
  • 1/2 yellow onion diced
  • 1 pound chicken breasts cubed
  • 1/2 cup shredded carrot
  • 2 cloves garlic minced

For serving

  • 1 head butter lettuce
  • Salted Peanuts chopped
  • Green onions thinly sliced
  • Cilantro chopped
  • Cauliflower Fried Rice

Instructions

  • Whisk together the sauce ingredients and set aside.

  • In a large skillet, heat sesame oil over medium heat.

  • Once hot, add in onion.

  • Cook for 5 minutes, or until the onion is tender.

  • Add in chicken, carrots, and garlic.

  • Cook until chicken is no longer pink.

  • Once cooked, stir in the sauce and serve in a lettuce cup with cauliflower rice, peanuts, green onions, and cilantro!

    Healthy Asian Lettuce Wraps Recipe - w/ Chicken (13) My girls and I do not like spicy foods so we left the Sriracha sauce out… What could we put in place of it to add just a little more flavor. It was a little bland without the Sriracha sauce

      Hi Daria! If you’re leaving the sriracha out I would recommend just adding a touch more of the peanut butter sauce to add a little extra flavor. Hope that helps!

    Healthy Asian Lettuce Wraps Recipe - w/ Chicken (14) Tried this tonight and even my picky husband liked them! I added a little oyster sauce and brown sugar to the recipe and went heavy on the ginger and garlic. I also served ours with a single “nest” of cold rice vermicelli instead of cauliflower rice.
