Have you seen the viral recipe on TikTok? They take a package of ramen noodles and throw away the seasoning packet. Instead, they boil the noodles and then make their own sauce in a skillet.

Then, they add the boiled noodles to the skillet and toss them in the sauce.The end result is almost like a homemade noodle stir fry.

When I saw this I knew I had to find a way to make a sugar-free and low-carb version. My mouth was watering just watching these videos!

Some people like to add brown sugar and soy sauce in their TikTok ramen, but to make mine keto-friendly, I used Swerve brown sugar substitute. I also used low-carb noodles instead of the packaged kind.

This entire recipe is a super budget-friendly lunch idea and there are a bunch of ways to customize it. In fact, I’ll share some of my favorite mix-in ideas below.

Keto Ramen Noodles

I used Shirataki angel hair noodles instead of packaged ramen. They are low in net carbs and high in fiber. You could also use Palmini angel hair pasta, spaghetti squash, or even zoodles. All of these options taste absolutely delicious with this sweet and spicy sauce.

After you make the keto ramen noodles, save them in an airtight container. They will stay fresh in the refrigerator for up to 5 days. If you added any vegetables to it, they might become softer the longer you keep them in the refrigerator.

Homemade Ramen Seasoning

The homemade ramen seasoning in this recipe is the best thing about it! Even if you have family or friends who aren’t on the keto diet, they can use this seasoning on regular ramen noodles.

The soy sauce gives it a classic umami flavor. Ginger paste and sriracha bring the heat! If you like things spicy, add more sriracha. I added garlic and chopped green onions for the classic aromatic flavors they add.

One of the best things to add to ramen is an egg. You could top it with soy sauce eggs, but I just scrambled some eggs like they did in the TikTok videos.
